SOUTH Downs College students took on the challenge of feeding themselves with just £1 per day.

Trying to see if they could cook a two-course meal for less than a pound, the BTEC level 3 IT practitioner students were helped by Andy Backshall from the college’s catering department.

They produced a risotto with either leeks, onions, mushrooms or chicken followed by pancakes with apples in a caramel sauce all for under £1 each.

This was achieved using the Living Below the Line website ( which provides details and a cookbook to raise funds for the fight against poverty in the UK.
