Figs, hazelnut crumb and honey starter | Recipe of the week

There is a time at the beginning of summer where we can see fresh figs in the green grocers but this season is short-lived.

The main season is just about now and they are beautiful, plump and sweet. Figs and honey were matched for each other and I use this combination for this starter which can be prepared in advance and just put together at a later date.

Ingredients, serves 4

For the crumb

75g plain flour; 35g butter; 10g oats; 20g crushed hazelnuts; 15g sunflower seeds; teaspoon nigella seeds; pinch sea salt; 4 figs; 80g soft crumbly goats cheese; 40ml honey; dessert spoon balsamic vinegar

1. Make the crumb by rubbing the flour and butter together to form a breadcrumb like consistency.

2. Add all the other dry ingredients and mix together.

3. Add 15ml of cold water and work in to form a crumble texture. (If you do not get the required texture add a little more water.)

4. Lay on a baking tray and cook in preheated oven 170c/gas 4 for 15 minutes until golden brown.

5. Allow to cool and store in an airtight tub if not using straight away.

6. Heat the honey and a tablespoon of water in a saucepan, add the balsamic and allow to cool.

7. Sprinkle a little crumb onto 4 plates. Cut the figs into quarters and arrange on the plates add the cheese on top of the figs and some more crumb.

8. Spoon the honey dressing over the plates and serve.
