There are 120 mottled brown and white Ayrshire cows and the beauties produce 6,000 litres of milk, per cow, each year.

Some of the milk is made into ice cream which can be tasted at the farm’s tearooms.

The farm originates from the 1930s when allotments and smallholdings were brought together.

It is bordered by marshland which is carefully maintained by the farm, along with large strips of uncultivated land which encourages wildlife. The farm has created a walk for people to enjoy this area. It is great to do before visiting the tea rooms where you can buy milk for this recipe.

Ingredients

Iced milk:

800ml milk

75g sugar

30g glucose

100ml condensed milk

Chocolate sauce:

60g dark chocolate chopped

50g caster sugar

50ml water

120ml double cream

Method

1. Heat the milk, sugar, and glucose in a large pan up to boiling and then simmer for 8 mins.

2. Add the condensed milk and allow to cool.

3. Churn in an ice cream machine and set into moulds. Freeze.

4. To make the chocolate sauce heat the water and sugar together in a saucepan until the sugar dissolves.

5. Add the cream and bring to the boil.

6. Take off the heat and stir in the chocolate until melted.

7. De-mould the iced milk into a bowl and pour the chocolate sauce over the top.
