Former chef in Michelin star restaurants to serve Spinnaker Tower diners 100m above the sea

A CHEF who has worked in a string of Michelin-starred restaurants will be serving up gourmet delights 100m above sea level next month.

Gary Pearce of popular Emsworth restaurant 36 On The Quay has been announced as the new chef behind the Sky Dining events at the Spinnaker Tower on October 12 and 13.

Sky Dining is a unique fine dining experience, served in a pop-up restaurant, surrounded by breath-taking panoramic night-time views over Portsmouth Harbour and The Solent.

The seven-course menu will showcase the finest seasonal produce from across Hampshire and the Isle of Wight.

Born and raised in Havant, Gary has forged a career working in some of the finest restaurants across the globe including Noma in Denmark (two Michelin stars), Old Suis in the Netherlands (three stars) and Aqua in Germany (three stars).

He picks up the baton from chef Stephanie Moon who has cooked the Sky Dining menu for the past three years. She has had to stand down for health reasons.

Gary said he's '˜thrilled' by the opportunity and added: '˜The tower is a truly unique venue and will provide a dramatic backdrop to the dining experience. I'm passionate about cooking with local produce and I'm excited to put together a menu that celebrates fresh food from across Hampshire and the surrounding area.'
