Pupils take the biscuit at Great Biscotti event

TWO Highbury College students won a recent competition launched by the Great British Biscotti Company.

Hampshire Fare and the biscuit firm organised The Great British Biscotti Competition, which asked students to think up tasty ideas using two local ingredients.

The canapes would need to complement their favourite biscotti.

Leeam Simpson and Harry Cotten, both students at Highbury College, were chosen as joint winners.

Leeam created a onion bhaji, cauliflower puree, curry oil and coriander topping on an Indian Spice Biscotti using ingredients from Pickwell Farm Shop in Netley.

Harry decided to make a smoked trout, pea puree, pickled cucumber and watercress topping on a chorizo and Parmesan biscotti. He selected his trout from Chalk Stream Foods in Awbridge.

Harry, 16, from Hilsea said: ‘I’m really happy that I have won this competition.

‘I want to work in a restaurant when I finish my course so it is fantastic that I am already getting some recognition.’
