I just fancied something really comforting, a dish that would not only be delicious, but would make me smile and warm my heart.
I really love all types of food but a good lasagne has to be one of the best comfort foods you can cook at home.

Hide AdIt’s a lengthy process when you make fresh pasta, your own meat sauce and of course the light cheese béchamel.
I like it with lots of pasta and thin layers of the sauces with hints of nutmeg in the cheese.
It was really wonderful to eat, however Julia pointed out that most of you would have a recipe for lasagne and that she would prefer a cake as her comfort food.
So I set about this recipe, not only for you, but also for a few brownie points at home.
Yes, she thought it was fab, so I hope you enjoy it too.
Ingredients
175g unsalted butter
175g caster sugar
180g self raising flour
Zest and juice half a lemon
2 eggs
50g flaked almonds
2 tbsp honey

Hide Ad1. Beat the butter, lemon zest, and sugar tougher until white and soft.
2. Add a tbsp of flour and mix in.
3. Add 1 egg and beat together.
4. Add 2 tbsp of the flour mix in and then beat in the other egg.
5. Add the remaining flour and mix together.
6. Now add the lemon juice and honey and half of the almonds. Mix together.
7. Put the mixture into a lined bread tin and top with the remaining almonds.
8. Cook in a preheated oven 170c gas 4 for 40 to 50 mins.
9. Allow to cool on a wire rack before eating.
